Like you, we love great food. Here at Springridge, we are forever trading recipes with each other, and this one is fairly legendary amongst us. We think you’ll love Farmer Amy’s Chicken and Broccoli Casserole so it’s our secret recipe share for today. It’s simple to make but definitely delivers: this is comfort food at its very best.
Here is what you’ll need:
2 large chicken breasts (bones and skin removed)
2 bunches broccoli (cut into florets)
1 can cream of mushroom soup
1 cup mayo
1/2 cup milk
1 1/2 tbsp lemon juice
1/2 tsp curry powder
1 cup shredded cheddar
1/2 cup breadcrumbs
1 tbsp melted butter
Cube chicken, sauté until just cooked. Set aside. Blanch or steam broccoli until just cooked, arrange in bottom of lightly greased 9×13 (or a deep 8×8) baking dish. Scatter half of chicken pieces over broccoli.
In a medium bowl, mix soup, mayo, milk, lemon, and curry. Stir in remaining chicken and half of the shredded cheddar. Pour evenly over casserole.
In a small bowl, mix breadcrumbs and melted butter. Stir in remaining 1/2 cup shredded cheddar. Sprinkle over casserole.
Bake casserole 350F for 45 minutes or until golden brown and bubbling. Remove from oven and stare in wonder at your creation. Enjoy!
