Old Fashioned Apple Pie
Pastry for 2 Crust pie
¾ to 1 cup sugar
3 Tbsp flour
1/8 tsp nutmeg
6-7 cups sliced peeled apples (2-21/2 lbs)
2 Tbsp butter (margarine)
½ tsp cinnamon
¼ tsp salt
Combine sugar, flour, cinnamon, nutmeg and salt. Mix lightly through apples. Heap pastry-lined 9” pie pan. Dot with butter. Adjust top crust and flute edges: cut vents. Bake at 425 degrees 50-60 minutes until crust is brown and apples are tender.
Apple Streusel Pie
½ cup sugar
½ tsp cinnamon
1 tbsp flour
Few grains salt
6 cups pared and sliced apples
½ cup flour
¾ cup brown sugar
¼ cup butter
Mix together sugar, cinnamon, flour and salt. Toss with apples: place in unbaked, unpricked pastry shell. Combine sugar and flour; cut in butter to make crumbs. Sprinkle over the pie filling. Bake at 425F for 35 to 40 minutes.
Apple Cake
2 cups sugar
1-cup vegetable oil
3 eggs
2 tsps vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsps cinnamon
4 cups raw apples, chopped
Mix ingredients by hand in order given. Pour into 9”x13” pan. Bake at 350F for 30-40 minutes. Meanwhile in saucepan combine 1-cup brown sugar, ¼ cup cream or milk, ¼ lb butter. Boil 4 minutes. Pour over baked cake and return to oven for a few more minutes.
